My Girlfriends Soup

This is a recipe from my friend Shelley that I have known since the 4th grade..i just made it and doubled this recipe..It was good, so I am passing it to my friends..

3 T. Butter or Margarine
1/4 Cup All purpose flour
4 cups milk (I use skim - You can use any kind you use daily)
2 cups diced potatoes
1/2 cup minced onion
1/2 to 3/4 tsp. salt
1/4 to 1/2 tsp. freshly ground pepper
Melt butter in saucepan over low heat, add flour (You are making a rue) stir until smooth - cook appx. 1 min., stirring constantly. Gradually add milk; potatoes, onion, salt and pepper. Cook over med. heat stirring frequently until mix is thickened and potatoes are done.I serve with a little grated cheese, garlic and chives -

Looks really yummy-- the worst thing I ever made was a homemade potato soup-- even the dog wouldn't eat it! Maybe I'll get brave and give yours a try!

This is also good with a little velveeta cheese melted in.

Hi Julie!
I actually live about 7 hours from S.L. I have not been to the Art Fair before. I bet it is fantastic! We have family in Salt Lake and in Ogden and when the roads have snow on them it is SCARY! I am glad you didn't go! BTW- the soup sounds delicious!!

ummm, Potato Soup is one of my favorites...served up with a slice of onion and big wedge of cornbread, dripping with butter...with the calories all taken out, OF COURSE !!
